Chicken Recipe

Chicken is one of the most commonly used ingredients in Mexican cuisine. Locally referred to as “pollo”, this ingredient can be served grilled, fried, or steamed. It is also flavored with various spices and herbs such as onions, pepper, garlic, cilantro, and jalapeno among many others.

There are a number of mouthwatering Mexican chicken recipes to choose from. Most of these dishes are not only delicious but they are also very easy to make.

Here is one tasty chicken recipe that you can whip up in your home:

Pollo Almendro
Pollo Almendro is a scrumptious chicken dish that you can serve for a hearty lunch or dinner. For this dish, you will need the following ingredients:

  • 4 skinless chicken breast, pounded until thin
  • 1 cup of chicken stock
  • 1 cup of toasted and sliced almonds
  • 4 slices of cooked and crumbled bacon
  • 2 tablespoons of canola oil
  • 1 teaspoon of crushed oregano
  • ½ teaspoon of salt
  • ½ teaspoon of freshly ground pepper
  • ¼ cup of chopped cilantro
  • 1 cup diced yellow onion
  • 1 clove of minced garlic
  • 1 inch of cinnamon stick
  • 1 bay leaf
  • ½ teaspoon of crushed red pepper flakes

Directions:

Pour the canola oil in a large pan. Add in the chicken while seasoning it with salt and pepper. Cook the chicken for about 2 minutes or until golden brown. Place the cooked meat in a plate and then set it aside.

Next, place the onion, cinnamon, oregano, pepper flakes, and bay leaf in the pan. Sauté the ingredients for 5 minutes or until the onions are translucent.

Pour in the chicken stock and the almonds. Return the chicken onto the skillet and set it over medium low heat.

Allow the mixture to simmer for 3 minutes.

Once cooked, transfer it in a serving platter. Top the dish with cilantro and bacon.

Serve and enjoy.
